These Spicy Feta Rolls With Chili Flakes are a delightful combination of creamy feta and crispy pastry, perfect for any occasion.

  • 1 cup Greek feta cheese (high-quality)
  • 1 package Phyllo dough
  • 1 teaspoon Chili flakes (adjust to taste)
  • 2 tablespoons Olive oil or melted butter
  • Fresh herbs (optional)
  • Garlic (optional)
  • Egg wash (optional)

Instructions

  1. If using frozen phyllo, ensure it's fully thawed in the refrigerator overnight, or at room temperature for a few hours until pliable. Once thawed, carefully unroll the phyllo and lay it flat on your clean work surface. Keep the remaining sheets covered with a slightly damp kitchen towel or plastic wrap.
  2. In a medium-sized bowl, crumble your feta cheese. Add your desired amount of chili flakes. If using any optional fresh herbs or minced garlic, add them now. Mix everything gently with a fork until just combined.
  3. Have your melted olive oil or butter ready in a small bowl with a pastry brush. Line a baking sheet with parchment paper. Preheat your oven to 375°F (190°C).
  4. Take one sheet of phyllo dough and lay it flat. Brush the entire surface lightly with your melted olive oil or butter. Place a second sheet of phyllo directly on top of the first, aligning it carefully. Brush this second sheet with olive oil or butter as well. Place a spoonful of the feta mixture along one of the shorter ends of the layered phyllo, leaving a small border at the edges. Fold the shorter side of the phyllo over the filling, then fold in the long sides of the phyllo over the filling, creating neat packets. Roll the phyllo up into a tight cigar shape, ensuring the seam is on the bottom.
  5. Continue this process with the remaining phyllo sheets and feta filling, placing the finished rolls seam-side down on your prepared baking sheet.
  6. Once all your rolls are assembled, lightly brush the tops of each roll with any remaining olive oil or butter. Bake in your preheated oven for 20-25 minutes, or until the rolls are beautifully golden brown and crispy.
  7. Carefully transfer the baked rolls to a wire rack to cool slightly for a few minutes before serving.
